Home for the Holiday
I missed Susie's cookie exchange this year, but I posted my favorite Christmas cookie recipe last year, so for those of you who missed it, here ya go.
Chocolate Mint Cookies
Cookies: 1 C sugar; 1/2 C butter (or butter-flavor Crisco), softened; 1 tsp. vanilla; 1 egg; 2 squares unsweetened baking chocolate, melted & cooled; 1 C flour; 1/2 tsp. salt. (Yes, I know there's no baking powder or soda... it's not a typo, TRUST me on this.)
Peppermint Frosting: 2&1/2 C confectioner's powedered sugar; 3 Tbls. milk; 1/4 C butter; 1/2 tsp. peppermint extract.
Fudge Drizzle: 1/4 C Butter; 6 oz. semi-sweet chocolate chips; 2 Tbls. corn syrup.
Directions: Heat oven to 375F degrees; mix sugar, butter, vanilla, egg and chocolate. Stir in flour and salt. Drop dough by rounded teaspoonful on ungreased cookie sheet. Flatten each slightly with the bottom of a greased glass dipped in sugar. Bake 6-8 minutes -- DO NOT OVER-BAKE! Cool completely before spreading peppermint frosting evenly over each one. Heat ingredients for fudge drizzle gently over stovetop until melted and mixed smooth. Drizzle holly leaves, trees, stars or other design, or randomly, over each cookie. Let the fudge drizzle set and cool completely before covering or wrapping the cookies.
Yield: about 3 dozen.

And new for this year, I give you my recipe for the Blueberry Muffins I bake every single Christmas morning, in keeping with the childhood tradition of Mr. Eclectic's family:
1/2 C butter, softened
1 and 1/2 C sugar
4 eggs
1 tsp. vanilla
2 and 2/3 C flour
1 tsp. baking soda
1/2 tsp. salt
1 and 1/2 C sour cream
2 C fresh blueberries
Preheat the oven to 400F degrees. Beat the butter and sugar in a medium bowl until they're light and fluffy, then beat in eggs, one at a time. Add the vanilla. In a separate bowl, sift together the flour, soda and salt. Alternately fold the sour cream and the flour mixture by large spoonfuls into the batter. Fold in the blueberries, and distribute into muffin tins lined with paper muffin cups. Bake for 18 to 20 minutes. Yield: 24 perfect muffins, preferred by Santas everywhere:

Our tree this year looked like this:

In fact, our house is so bright and shiny that even the cat is lit up:

And there you have it, home with us for the holiday. Wishing you all a very merry, very love-, laughter-, and peace-filled Christmas.

Merry Christmas. Pretty Tree.
Those cookies sound great. Nice looking tree.
Merry Christmas.
Merry Christmas!
How about sharing some cookies with an old dude in Louisville?
Well, it's no Rudolph nose, but those are some impressive eyes on that cat! Looks like she's recovered well from her incident with the BrizMan.
Merry Christmas!
Although I've seen you around Susie's and other places, this is the first time I made my way over here.
The Blueberry Muffin recipe is a keeper.
The tree and cat are the picture of All is Bright.
Merry Christmas!
I like your fatcat. Good recipes, too. These peeps love them some b'berry muffins. I'll try yours :)
sapphira is getting so big!
happy christmas, gorgeous.
I just have one question. How do you have a corner that big and open for the tree with absolutely no other stuff visible around it?! The tree is lovely and I get the feeling of lots of space too! Wonderful! Merry Christmas!
I love you, Merry Christmas . . .
Bill: Merry Christmas to you, too. Thanks for coming by!
Mad William: They're my favorite cookie to make, although they're a pain in the neck. They really do taste good though.
S.S.Nick: Of course! You want some muffins, too? I'll have coffee ready when you get here!
Shawkey: Oh yeah... she's all kinds of recovered, and ornery too! Somebody's gonna have to sit me down and pierce through this thick skull so I can learn how to alter photos to include red noses, etc. You volunteering?
Mrs.DOF: Hello! It's nice to see you here! Thanks for stopping by. The muffins are easy to make, and quite worth it. I hope your Christmas was a happy day!
Susie: Sapphira is definitely going to be fat if we don't start monitoring her food a bit more carefully. Eeep!
I hope you do try the muffins -- I've saved some for you! They're quite perfect, though, so I'll warn you they may become addicting.
Kat: She's enormous! I think she's trying to out-grow Brizzy so she can boss him around.
It was a very happy day, thanks love!
Traci: It's the bay window in the formal living room, which aside from the computer desk in the alcove opposite the window, we hardly ever use. The reason no other "stuff" is visible, is because I moved everything around to put up the tree!
Nina: And I love you! Perhaps we'll make it to Colorado this year. I'm crossing my fingers!
Rick: The cat? You have NO idea... Good to see you around, man.
That cat is really lit! What's she drinking?
Thanks for sharing your Christmas with us.
I think I saw that cat in a Disney movie once.
It's so difficult to keep the cats from eating the strings of lights, isn't it? *sigh* I hope you had a really lovely holiday anyway! :)
And those cookies... sound delish!
I thought I commented a couple of days ago but looks like Blogger ate it...
I'm glad you all had a lovely time over Christmas and I'm planning on trying the cookie recipe with Stumpy if we ever get her room cleared...
Hi, E! I am a terrible baker, but luckily my sister is a Martha Stewart type, and she hooked me up.
